Legend has it that it was created in Vienna in 1683 to celebrate the victory against the Ottomans, whose symbol was the crescent moon. Bakers, who worked at night, supposedly raised the alarm during a surprise attack, and in their honor, a pastry was made in the shape of a crescent.

It was much later, in the 19th century, that the recipe crossed borders and arrived in Paris. It was there that it became a flaky pastry, thanks to the lamination of the butter dough , which gives the croissant its airy and crispy texture.
