A Short History of Champagne
Champagne originated in the Champagne region of northeastern France. In the 17th century, the region’s winemakers sought to produce still wines (without bubbles), but the cool climate sometimes prevented complete fermentation before winter. In the spring, with rising temperatures, fermentation would resume in the bottle, creating unexpected bubbles.
Initially, this phenomenon was seen as a flaw. Bottles would explode and corks would pop out. It was thanks to technical advances and the meticulous work of monks, notably Dom Pérignon , that Champagne was mastered and perfected.
Dom Pérignon, a Benedictine monk from the Abbey of Hautvillers, did not invent Champagne, but he greatly contributed to improving the method and selecting the best grapes. He is said to have uttered the famous phrase:
“Come quickly, I’m tasting the stars!”
Today, Champagne has become a celebratory and prestigious wine, recognized and protected throughout the world.
